A quick and friendly weekday dinner
Ingredients:
250 g (approximately ½ lb) of pasta (penne, rigatoni or broken lasagna sheets – pre-cooked/al dente)
250 g (½ lb) of minced beef (or turkey/chicken)
1 jar (approximately 2 cups) of marinara or tomato pasta sauce
1 small onion, finely chopped
2 cloves of chopped garlic
1 teaspoon of olive oil
1 teaspoon of Italian seasoning (oregano, basil, thyme)
200 g (about 1 1/2 cups) of grated mozzarella cheese
½ cup grated Parmesan cheese
1 cup of ricotta cheese (or cottage cheese/cream cheese to shorten the recipe)
Salt and pepper, to taste
