Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil or butter
Salt and pepper, to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp dried Italian seasoning (or thyme, basil, oregano)
1 cup heavy cream
1 cup chicken broth
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup spinach (fresh or frozen)
1 tbsp Dijon mustard (optional, for a bit of tang)
1 tbsp fresh parsley (optional, for garnish)

Season the chicken breasts with salt, pepper, garlic powder, onion powder, and dried Italian seasoning.
Heat olive oil or butter in a large skillet over medium-high heat.
Cook the chicken:
Once the oil is hot, add the chicken breasts to the skillet. Cook for 6-7 minutes on each side until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C).
Remove the chicken from the skillet and set aside. Keep warm.
Make the creamy sauce:
In the same skillet, reduce the heat to medium. Add the chicken broth and scrape up any bits stuck to the bottom of the pan (this adds flavor!).
Stir in the heavy cream and bring to a simmer. Let it cook for 3-4 minutes, allowing the sauce to thicken slightly.
