
SWEET MEXICAN PANCAKES
1. Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
2. Mix Wet Ingredients
In another bowl, beat the egg, then add milk, melted butter, and vanilla extract. Whisk until smooth.
3. Combine
Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined. (Do not overmix—the batter should be slightly lumpy.)
4. Cook Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
Pour about ¼ cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface (about 2 minutes), then flip and cook another 1–2 minutes until golden brown.
5. Serve
Stack the pancakes on a plate. Serve warm with syrup, honey, whipped cream, or a sprinkle of cinnamon sugar for a Mexican touch.
