
Lemon Curd: Delicious lemon cream in 10 minutes
Preparation:
1. Soak the gelatin in cold water for 5 minutes, then whisk the eggs and sugar in a bowl until frothy. Stir in the lemon juice and zest.

2. Pour the mixture into a saucepan and heat over low heat for 8–10 minutes, stirring constantly, until thickened. Remove from heat, squeeze out the gelatin and stir it in until dissolved.

3. Add the cold butter in small pieces and stir until a smooth mixture forms. Finally, pour into a sterilized jar and let cool completely.
Tip: Strain through a fine sieve for an extra smooth texture.
