Ingredients
For the Foil Packets:
1½ pounds sirloin steak or ribeye, cut into 1½-inch cubes
1½ pounds baby potatoes, halved (or quartered if large)
4 tablespoons olive oil (divided use)
3 tablespoons butter, melted
4 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried Italian seasoning (or a mix of thyme, oregano, and basil)
½ teaspoon crushed red pepper flakes (optional, for mild heat)
Salt and black pepper to taste
1 tablespoon fresh chopped parsley (for garnish)
1 tablespoon fresh thyme or rosemary (optional, for aromatic flavor)
For Serving:
Additional melted butter or garlic butter for drizzling
Lemon wedges (optional, to brighten the flavor)
Instructions
Step 1: Prepare the Ingredients
Wash and dry the baby potatoes, then cut them into halves or quarters so they cook evenly.
Cut the steak into cubes that are roughly the same size as the potato pieces.
Mince the garlic and chop any fresh herbs you plan to use.
Preheat your grill to medium-high heat (about 400°F or 200°C), or preheat your oven to 425°F (220°C).
Step 2: Par-Cook the Potatoes (Optional but Recommended)
Potatoes take slightly longer to cook than steak, so for even doneness, it helps to par-cook them first.
Place the potatoes in a microwave-safe bowl, add a tablespoon of water, cover loosely, and microwave for 5–7 minutes until just starting to soften.
Alternatively, you can boil them for about 5 minutes in salted water, then drain and pat dry.
Set aside to cool slightly.
Step 3: Make the Garlic Butter Marinade
In a small bowl, combine the melted butter, olive oil, minced garlic, onion powder, smoked paprika, Italian seasoning, red pepper flakes, salt, and black pepper.
Whisk well to blend.
This mixture will serve as both a marinade and a finishing glaze.
Step 4: Combine Steak and Potatoes
In a large bowl, add the cubed steak and par-cooked potatoes.
Pour the garlic butter mixture over them and toss well until everything is evenly coated.
Taste a small piece of potato to adjust seasoning with extra salt or pepper if needed.
Step 5: Assemble the Foil Packets
Tear off four large pieces of heavy-duty aluminum foil, each about 12 by 18 inches.
Lightly coat the center of each sheet with a bit of olive oil or nonstick spray.
Divide the steak and potato mixture evenly among the four sheets, placing them in the center.
If desired, add a sprig of rosemary or thyme on top for added aroma.
Fold the long sides of the foil up and over the mixture, then fold the ends in tightly to seal. Make sure the packets are closed well but have a little space inside for steam to circulate.
Step 6: Cook the Foil Packets
