Prep Oven – Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
Season Potatoes – In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and half of the Parmesan.
Arrange – Spread potatoes cut-side down in a single layer on the baking sheet (this makes them extra crispy).
Roast – Bake for 35–40 minutes, flipping halfway, until golden and crispy.
Finish – Sprinkle remaining Parmesan and parsley over hot potatoes. Toss lightly and serve.
Tips for Extra Crispy Potatoes:
Soak cut potatoes in cold water for 20 minutes, then pat dry before seasoning.
Always roast cut-side down first.
