Step 1: Blend the Ingredients
- In a food processor, combine the pitted dates, nuts, cocoa powder, nut butter, vanilla extract, and pinch of salt.
- Blend until the mixture forms a sticky dough. If the mixture is too dry, add 1–2 teaspoons of water or nut milk to help it come together.
Step 2: Add Optional Mix-Ins
- If using seeds, shredded coconut, or chocolate chips, pulse them into the mixture briefly to distribute evenly.
Step 3: Shape the Bites
- Scoop out about 1 tablespoon of the mixture at a time and roll it into small balls between your palms.
- If desired, roll the balls in shredded coconut, crushed nuts, or cocoa powder for added texture and flavor.
Step 4: Chill
- Place the energy bites on a plate or tray and refrigerate for 10–15 minutes to firm up.
Step 5: Serve
- Enjoy immediately or store in an airtight container in the fridge for up to 1 week.
