Cyril Lignac’s foolproof crepes

Ingredients (for about 12 large crepes)
250g flour
3 tablespoons caster sugar
3 eggs
500ml milk
1 pinch of salt
2 tablespoons vegetable oil
Optional: rum, orange blossom water, or vanilla extract
Preparation Steps
1. Prepare the Batter
In a large bowl, mix the flour, sugar, and a pinch of salt.

Add the eggs one at a time, whisking well.
Add the oil, then gradually pour in the milk, mixing until you have a smooth batter.

Finish by adding your chosen flavoring (rum, orange blossom water, vanilla).

2. Let the Batter Rest
Let the batter rest for 1 hour for softer crepes.

If you’re in a hurry, you can use it immediately.

3. Cook the Crepes
Heat a lightly greased pan.

Pour a ladleful of batter and spread it thinly.
Cook until the edges start to pull away from the pan, then flip and cook on the other side.

Enjoying Crepes While Maintaining Nutritional Balance
Cyril Lignac’s crepes are synonymous with pleasure and conviviality. However, it’s entirely possible to enjoy this dessert without compromising your health or wellness goals. Here are some practical tips for incorporating crepes into a balanced diet, while taking into account the glycemic index and weight management.

1) Alternative Flours
Use whole wheat or buckwheat flour to lower the glycemic index and promote digestion.

2) Light Toppings
Opt for fresh fruit, rich in antioxidants, rather than overly sweet or processed toppings.

3) Avoid Overindulgence
Enjoy your crepes in moderation to maintain good blood sugar control and avoid sugar spikes.

4) Adding Fiber
A little chia or flax seeds in the batter can improve satiety and act as a natural fat burner.
