1. Prep the Pan and Topping
Preheat your oven to 400°F (200°C).
Line a 10×15-inch rimmed baking sheet with aluminum foil or parchment paper and lightly spray with non-stick cooking spray for extra insurance.
Arrange the saltine crackers in a single, even layer across the prepared baking sheet. They should be close together, touching if possible.
In a small bowl, whisk together the 1/4 cup Granulated Sugar and 2 teaspoons Ground Cinnamon for the topping. Set this aside.
2. Make the Toffee
In a medium saucepan over medium heat, melt the 1 cup of butter and 1 cup of brown sugar, stirring frequently.
Bring the mixture to a full boil, stirring constantly.
Once boiling, continue to boil and stir continuously for 3-5 minutes. The mixture should thicken slightly and turn a deep caramel color. This step is crucial for non-chewy toffee!
Remove the saucepan from the heat immediately.
Carefully pour the hot toffee mixture evenly over the saltine crackers. Use a rubber spatula to gently spread the toffee to cover the crackers completely.
3. Bake and Melt
Place the baking sheet in the preheated oven and bake for 4 to 6 minutes, or until the toffee is bubbling all over.
Remove the pan from the oven and let it sit for just a minute. If any crackers have shifted, gently push them back into place.
Immediately sprinkle the White Chocolate Chips evenly over the hot toffee-coated crackers.
Let the chips sit for about 5 minutes to soften and melt from the residual heat.
4. Finish and Cool
Using an offset spatula or the back of a spoon, gently spread the melted white chocolate into an even layer over the crackers and toffee.
Sprinkle the reserved cinnamon-sugar mixture evenly and generously over the melted chocolate while it is still soft.
Allow the candy to cool completely and harden. This takes about 30-60 minutes at room temperature, or you can place the pan in the refrigerator for about 10-15 minutes to speed up the setting process.
Once completely set, break the candy into irregular, bite-sized pieces to serve.
