3. Thicken the Stuffing
Add the two beaten eggs to the slightly cooled meat-onion mixture. Mix thoroughly to obtain a smooth, well-bound stuffing. Set aside.
4. Prepare the Mozzarella Sauce
In a saucepan, melt the butter over low heat. Add the flour and whisk for 1 to 2 minutes to form a roux. Gradually pour in the milk, whisking constantly to avoid lumps. Let thicken over medium heat for 5 minutes.
5. Stir in the cheese
Off the heat, stir in the grated mozzarella. Season lightly with salt and a pinch of nutmeg if desired, then stir until smooth and creamy.

6. Dish preparation
Preheat your oven to 190°C (375°F). Grease a large baking dish with olive oil. Fill each cannelloni tube with the meat filling, using a small spoon or a piping bag.
7. Assembly
Arrange the cannelloni side by side in the dish. Cover them generously with mozzarella sauce. Make sure to coat the entire surface to prevent them from drying out in the oven.
8. Gratin
Sprinkle with grated Parmesan cheese, then cover the dish with aluminum foil. Bake for 30 minutes. Then remove the foil and bake for another 10 minutes for a golden brown gratin.
